So, I thought I should post my first recipe!  Think of this delicious recipe the next time you need a solution to over-ripening bananas!  It is a recipe from my Mother, who is my cooking inspiration in life.  However, I did add the chocolate chips as chocolate and banana are a match made in Gooey Heaven!


  • 1 1/2 cup flour
  • 1/2 tsp salt
  • 1/2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp nutmeg
  • 1/3 cup chocolate chips (or as many as you would like!)
  • 1 cup ripe mashed bananas  (2-3 bananas….the more the better!)
  • 3 Tbls vegetable oil
  • 3/4 cup sugar
  • 1 tsp vanilla extract
  • 1 egg

Preheat the oven to 350 degrees.

Mix the mashed bananners, vegetable oil, sugar, Vanilla and Egg in your mixer or bowl and all of the other dry ingredients (except the chocolate chips) in another bowl.  Slowly mix the Dry ingredients into the Wet ingredients but don’t overmix.  Pour the batter into a greased 9 in. cake pan and sprinkle evenly with 1/3 cup chocolate chips gently pressing the chocolate chips into the top of the batter.   Bake for 20-25 minutes or until a toothpick comes out clean.  Cool on a baking rack.


Don’t start the Glaze until the Cake is out of the oven otherwise it will harden up and not drizzle over the cake quite as well.  It only takes like 2 minutes to make!

  • 1/2 cup brown sugar
  • 2 Tbls water
  • 4 Tbls Butter
  • 3 Tbls Coconut
  • 2 Tbls chopped almonds or other nuts (optional)  I am not nuts about nuts, but most people seem to like them.

Melt the butter and sugar together with the water over a medium low heat with the water and bring to a boil.  Boil for 1 minute and then add coconut and nuts (if you are using them).  Mix well over the heat for 20 seconds or so and then gently spoon over the top of your warm cake, starting in the middle .  It should slowly ooze to the outside of the cake and drip down the edges forming a scrumptious topping!

Then you get to eat it!  Yes it is glorified banana bread….but feels MUCH more decadent!  Let me know what you think!
