Holy Moly Guacamole!

Game day rolls around and it is SO easy to just order a few pizza’s and break out the chips and salsa and call it good!  I do think it is nice to also offer something homemade alongside all of the traditional game day fare! As the NFL Playoffs are here and the Super Bowl is around the corner…this Guac is a must have for your game day offerings! It is fresh, delicious, and will disappear before your very eyes!

We had a couple friends over for the Seahawks first playoff game against the Saint’s and I made enchiladas and this guacamole. I don’t want to assume…but I think it might have made all the difference in helping Seattle to a Win…that and our team playing AWESOME! Enjoy!

Lemon Meringue Pie

HAPPY NEW YEAR!

Lately I have been CRAVING all things lemon and have thus far satisfied this craving with lemon cake, and a lemon Bismark Donut, and Citrus drinks including Lillian’s SLUSH!  As it is a NEW YEAR, I thought I should celebrate the 1st of January with trying something new!  So this was my very first attempt at a Lemon Meringue Pie and all in all I think it turned out great!  I am not a big crust fan and think that next time I will simply make the lemon filling into little individual custards topped with Meringue!  I do know that most people LOVE crust so feel free to make and eat all of the crust you like…with no judgement from me!  This particular filling recipe was adapted from Paula Deen’s Recipe on Food Network.

We had some good friends over to enjoy this pie with us and their little son Cooper even enjoyed a small slice.  Watching his cute little face smile at the first taste and then slowly move into an involuntary pucker was one of the CUTEST things I have ever seen! We were all laughing really really hard watching him eat it, and then he started cracking up too in between bites enjoying the attention!  It was a pretty wonderful and precious moment…all thanks to this pie!  That in itself is a reason to try it!

Baked Gouda

Christmas is my VERY FAVORITE time of year!  The cold weather, the giving spirit, the Christmas Story coming alive, special time with family and friends, amazing parties and delicious food everywhere…it really can’t be beat!   Every year my husband and I spend the holidays with both of our families starting on about the 23rd.  So before that date, we have one night that is our own special Christmas at home.   We clear the coffee table out of our living room and put the Queen Size Air Mattress out on the floor right next to the fireplace and Christmas tree.  We cover it with blankets and pillows and settle in for an evening of laughing, christmas movies, our own special stocking time and lots of smooching!  haha…it is one my favorite nights of the whole year!  We both turn into excited little children finding joy in giving each other gifts and delighting in the magic of Christmas!    We sleep out in our Christmas zone with the lights on the tree glowing long after the last embers of the fire have died down and it really is perfect!

This year we made dinner together as part of the evening and also made some yummy treats the next morning and day as our celebration continued with watching some football together!  This Baked Gouda made a short visit  to the Christmas zone before we devoured every morsel!  This is a recipe I got from Nancy Fike and it is a very simple recipe that is extremely tasty!   Once again…anything where the main ingredient is oozing cheese and you know it  MUST be good!   Merry Christmas!

Soda Cracker Delight…or the easiest “Toffee” you will ever make!

This is an old school recipe that is still around for a reason…it is awesome!  I believe it has many names and many different versions and this is simply my adaptation.  I will warn you (don’t say I didn’t warn you) it is one of the most addicting desserts ever so you might want to make a couple batches…one for yourself and one to share with others!

I was first introduced to this recipe in high school at my friend’s the Eichler’s house!  Bethany Eichler is one of my oldest and dearest friends and this dessert is one of the many important contributions she has made to my life!  This is really an easy dessert but is impressive both visually and deliciously!  I hope you will try it this holiday season and that it will make a beautiful addition to your dessert table!

Christmas Fudge

One of the things that I LOVE about the holidays is the traditional foods that show up year after year!  There are certain foods that actually taste like Christmas to me and this fudge is one of them!  I make it every year and if it didn’t show up on the holiday dessert table, I might be excommunicated from the family haha…well not really I hope!

It is easy to make, you just need to be patient!  I made two batches this year.  I made one Dairy Free Vegan Batch and one regular batch with a little bit of peanut butter added in to make it extra special…and it was!  This dessert freezes really well and makes quite a lot so it is great to make early on in the season and then take to share at all of your holiday parties!

Pumpkin Pudding with Toffee Crisp Topping!



HAPPY THANKSGIVING!!!!

I am thankful for many things this year including my family, friends, and each and every one of you who takes the time to read this blog and support and encourage me!  It really means a lot when you visit, leave a comment and make my recipes!  So THANKS TO YOU!!!  Now on to the recipe!

I had a can of pumpkin in my cubboard that was saying to me, “hey…it’s NOVEMBER!  Use me in something delicious!!!”  So who am I to deny a can of pumpkin its very destiny!  I wasn’t really in the mood for pumpkin bread or pumpkin pie (we are not really crust people) so I decided to try something new!  Pumpkin Pudding!

Pumpkin Pudding it turns out is very much like Pumpkin Pie filling which worked out great for us as that is my favorite part of the pie anyway!  However I did want to spice it up a bit as this was the only destiny this can of pumpkin was EVER going to have and FAR be it from me to let little Pumpy (yes I named the can of pumpkin) down!  SO, I decided to put a Crisp topping much like the kind my mother uses on her Thanksgiving sweet potatoes, on top of my Pumpy Pudding.  However I did not have any Pecans handy so substituted a little bit of crushed toffee for some crunch!  The result was this DELICIOUS and Very Simple concoction that may just become a fall tradition in our family and a future destiny of many Can’s of Pumpkin!  Lucky little devils!

Feta Roasted Veggie Pizza…Goodness on a Pizza Pie!

One of the things that we eat quite often at our house is Roasted Veggies.  We eat them at least once a week and often more than that!  I love SO many things about roasted veggies!  I love the way they taste, the way they smell, the way they look, the way they TASTE, oh I already said that…but some things are worth saying twice!

Often I will chop up a bunch of veggies, roast some and then store the rest of the raw veggies in the fridge in a plastic bag ready for use another time!  Tonight my husband is at a meeting so I am on my own for dinner!  I had a bag of chopped fingerling potatoes, butternut squash and red onions looking at me from the fridge and I thought I would make a Roasted Veggie and Goat Cheese pizza!  Because my husband hates goat cheese I thought this would be a good chance for me to have some while he was gone!  Sadly we did not have any goat cheese, so I substituted Feta cheese and it still turned out Delicioso!

A little side note….potatoes are absolutely fabulous on pizza!
