Individual Blueberry Pear Crisps!

I am back to blogging after a 4 month break!  I had my sweet baby boy in July and he has quickly won my heart!  I have been spending the majority of my time with him, but now that he is taking longer naps…I am having a bit more time to spend cooking and blogging!  This dessert is simply amazing!  It is a perfect late summer/early fall dish and and a great finish to any meal!  This recipe is very similar to other crisps that I have made with one additional surprise ingredient added to the topping.  I think you will really enjoy it!  Also thanks for sticking with me even though I haven’t posted in awhile!

Strawberry Pear Crisp, a delicious improvisation!

Happy Easter!!!

Ok..Easter was yesterday, but as I did not get to wish you all a Happy Easter then…today will have to do!  My husband Chris and I are in the middle of purchasing our first home, and are busy packing up our house while getting everything ready to paint and clean up our new place before we move it!  Saturday is the big move and the only reason I have one single second to put up a blog post is because the closing on our house keeps getting delayed, so we cannot get in the new place yet to start working!

That is also the reason I had time to make this quick, impromptu dessert for our Easter meal yesterday!  I was going to cop out and just buy some ice cream as I had been packing all morning!  However, all you need to make this crisp is flour, sugar, butter, cinnamon, lemon juice and FRUIT!!!  Even among the packing I was able to put together a quick topping mixture and then we went by the grocery store to grab some ice cream and any fruit that looked good!  I wanted this dish to be Springy instead of Falley so I didn’t want to make an apple crisp.  The only other fruit that looked ripe and ready for me were the Strawberries and Pears!  SO, I thought…what the heck…lets make a Strawberry Pear Crisp!  And it turns out that Strawberry Pear Crisps are AMAZING!!!

Potato Pancakes…yum yum yum!

These Potato Pancakes were sort of an experiment…and a lovely experiment at that!  I had a bunch of potato pulp left over from  scooping out the insides of my potato skins and wasn’t sure what to do with it.  I decided to try and make some potato pancakes and the results were tasty, cheesy and delicious!  I highly recommend trying this recipe if you find yourself with leftover mashed potatoes, or potato pulp of any kind!  I used cheddar cheese in these particular pancakes, but I think parmesan, blue cheese, or any other mix of cheese might be fabulous in these!  You might even want to mash up some potatoes just to make this recipe…it is that good!

Chicken Feta Spinach Crepes, A Perfect Meal for Two!

My husband and I decided to start off the weekend by making brunch together, but could not decide what to make!  After a careful inspection of our kitchen and all of our options, we decided to make Savory Crepes for ourselves!  Now if you have never made Crepes before…please note that they are MUCH EASIER than you think!  YOU CAN DO IT!

It would be an understatement to say that I do MOST of the cooking in our household!  Aside from the occasional quesadilla or…lets be honest here and say a quesadilla pretty much sums it up, I am mostly on my own in prepping the food for our family!  Since I have been pregnant however, my husband has stepped up in a big way and has been helping me out much more with the cooking!  He has prepared us some delicious salads, grilled sandwiches, and is always helping me with the chopping and dicing and prep work.  I am very grateful to him for this help and know he will get more chances to use his new skills when our little baby arrives in July!

I also want to say that these Crepes were the start to a perfectly relaxing weekend together and I think that making brunch together on Saturdays may just become a tradition!  They would also be perfect for a stay at home Valentines Dinner!  You could even make Sweet Crepes for dessert afterward…Banana and Nutella, strawberries and Nutella, Cinnamon Apples with IceCream…the dessert possibilities are endless!

Whole Wheat Chive Biscuits with Chicken Sausage Gravy

I have a confession to make. I am not really a Breakfast person!  I don’t love milk, I don’t LOVE scrambled or fried eggs, I don’t really enjoy pancakes, and I could do without oatmeal (though I eat it out of guilt sometimes)!  However, I do LOVE Biscuits and Gravy and could really eat it anytime of day!  Unfortunately, it is not known as the most healthy breakfast on the planet and therefore not made that often, which is for the best probably…UNTIL NOW!!!

Behold….a not so naughty form of Biscuits and Gravy!  I first made this dish when our friends John and Jess were over one night and we were trying to figure out what to have for dinner.  I declared that I felt like biscuits and gravy, and with the help of my friend Jess…30 minutes later we were feasting on breakfast for dinner with NO objections!

There are three things I do to make this dish a little healthier!  I use Chicken Sausage which has way less fat than its oinking counterpart.  I use whole wheat in my biscuits, and 1% milk in my gravy!  All three of these small changes makes for a big difference in calories while not really effecting the delicious flavor of my final dish!  I hope you will try this recipe and let me know what you think!

Caramel Apple Pie with Streusel Toffee Topping!

When I was in 8th Grade, I lost the class spelling bee on the world CARAMEL!  After correctly spelling words like mischievous, amateur, and hierarchy, it was down to just me and one other girl.  The class was getting restless as we were late for lunch due to the intense standoff!  My next word was Caramel, and as the class groaned at the simpleness of the word, knowing they were going to be a few more minutes late for lunch…I confidently stated C A R M E L…and class was dismissed!

Now, my bitterness about this sad spelling event  has waned and each time I eat a delicious Caramel Conconction, it wanes a bit more!   This Caramel Apple pie is one of our favorite family Fall pies and it is the second installation of my Caramel Apple Series!  I hope you will enjoy it as much as we have in all of its Caramelly Appley gooeyness!

Caramel Apple Ice Cream

Fall is officially upon us and I have decided to spend the first few weeks of October devoting this blog to all things Caramel Apple! The plan is to start with this ice cream, move on to my caramel apple pie, and finish up with some gourmet Caramel Apples (my favorite!)! I hope you will enjoy this little series as much as we already have…haha!

When developing the recipe, I was working to combine two of my very favorite things, Caramel Apples and Ice Cream. I had never heard of Caramel Apple Ice Cream, and thought I would give it a try. The result was a delicious ice cream that tasted like fall and caramel, and apples, and apple pie and just really good! It is a unique ice cream for sure, but I have a feeling it will become a “Welcome to Fall” traditional food in our house as it really turned out quite yummy! I hope you will enjoy it too and will come back and let me know if you try it!

My family presses fresh apple cider each fall and even though we live in Seattle, they always manage to get a gallon or two of the fresh fall nectar out to me and my husband and we are always very very grateful! I used this fresh cider as part of the ice cream base, but if you don’t have fresh cider, I am sure some store bought would work just fine.
