A Tale of Two Shortbreads

Once upon a time there were two shortbreads.  Both were very delicious but each claimed to be the MOST tasty and demanded a judge to taste them both and decide who was indeed the best tasting cookie.  So the judge tasted one flavor and then the other…but could not make up her mind…so she tasted both again and then again.  Then she called in her family and friends to taste the decadent cookies and help her make her decision!  FINALLY she realized that she loved both shortbreads equally and turned to give them her results, but alas…the plates were empty as both batches of shortbread had been eaten up!

So I had never made a shortbread cookie until today…and today I made 2 delicious varieties!  I have been craving baking and was wanting to make something new and unique and thought I would try this out!  I made 2 separate half batches of shortbread cookies, one was a chocolate chip shortbread cookie, and the other was an orange, cardamom chocolate chip shortbread cookie!  Both were VERY easy to make and really really yummy!  I think dipping both of them in chocolate also helped to improve the fabulous flavor!  The Orange Cardamom variety would be especially fun for the Thanksgiving and Christmas as it has a spicy and warm flavor…and basically tastes like the Holidays!

Individual Blueberry Pear Crisps!

I am back to blogging after a 4 month break!  I had my sweet baby boy in July and he has quickly won my heart!  I have been spending the majority of my time with him, but now that he is taking longer naps…I am having a bit more time to spend cooking and blogging!  This dessert is simply amazing!  It is a perfect late summer/early fall dish and and a great finish to any meal!  This recipe is very similar to other crisps that I have made with one additional surprise ingredient added to the topping.  I think you will really enjoy it!  Also thanks for sticking with me even though I haven’t posted in awhile!

White Bean and Arugula Baguettes

My fabulous mother-in-law recently had a milestone birthday and we threw her a party with appetizers and desserts!  This white bean baguette was one of the appetizers that I made and it is really really flavorful and delicious!  A really close family friend, Nancy Fike introduced this recipe to me and I will be forever indebted!  Not only are the flavors incredible, but the colors are striking!  The white, green and purple together make a beautiful display while being very easy to put together!  Hope you will try and enjoy!

Strawberry Pear Crisp, a delicious improvisation!

Happy Easter!!!

Ok..Easter was yesterday, but as I did not get to wish you all a Happy Easter then…today will have to do!  My husband Chris and I are in the middle of purchasing our first home, and are busy packing up our house while getting everything ready to paint and clean up our new place before we move it!  Saturday is the big move and the only reason I have one single second to put up a blog post is because the closing on our house keeps getting delayed, so we cannot get in the new place yet to start working!

That is also the reason I had time to make this quick, impromptu dessert for our Easter meal yesterday!  I was going to cop out and just buy some ice cream as I had been packing all morning!  However, all you need to make this crisp is flour, sugar, butter, cinnamon, lemon juice and FRUIT!!!  Even among the packing I was able to put together a quick topping mixture and then we went by the grocery store to grab some ice cream and any fruit that looked good!  I wanted this dish to be Springy instead of Falley so I didn’t want to make an apple crisp.  The only other fruit that looked ripe and ready for me were the Strawberries and Pears!  SO, I thought…what the heck…lets make a Strawberry Pear Crisp!  And it turns out that Strawberry Pear Crisps are AMAZING!!!

Potato Pancakes…yum yum yum!

These Potato Pancakes were sort of an experiment…and a lovely experiment at that!  I had a bunch of potato pulp left over from  scooping out the insides of my potato skins and wasn’t sure what to do with it.  I decided to try and make some potato pancakes and the results were tasty, cheesy and delicious!  I highly recommend trying this recipe if you find yourself with leftover mashed potatoes, or potato pulp of any kind!  I used cheddar cheese in these particular pancakes, but I think parmesan, blue cheese, or any other mix of cheese might be fabulous in these!  You might even want to mash up some potatoes just to make this recipe…it is that good!

Chicken Feta Spinach Crepes, A Perfect Meal for Two!

My husband and I decided to start off the weekend by making brunch together, but could not decide what to make!  After a careful inspection of our kitchen and all of our options, we decided to make Savory Crepes for ourselves!  Now if you have never made Crepes before…please note that they are MUCH EASIER than you think!  YOU CAN DO IT!

It would be an understatement to say that I do MOST of the cooking in our household!  Aside from the occasional quesadilla or…lets be honest here and say a quesadilla pretty much sums it up, I am mostly on my own in prepping the food for our family!  Since I have been pregnant however, my husband has stepped up in a big way and has been helping me out much more with the cooking!  He has prepared us some delicious salads, grilled sandwiches, and is always helping me with the chopping and dicing and prep work.  I am very grateful to him for this help and know he will get more chances to use his new skills when our little baby arrives in July!

I also want to say that these Crepes were the start to a perfectly relaxing weekend together and I think that making brunch together on Saturdays may just become a tradition!  They would also be perfect for a stay at home Valentines Dinner!  You could even make Sweet Crepes for dessert afterward…Banana and Nutella, strawberries and Nutella, Cinnamon Apples with IceCream…the dessert possibilities are endless!

Lemon Meringue Pie

HAPPY NEW YEAR!

Lately I have been CRAVING all things lemon and have thus far satisfied this craving with lemon cake, and a lemon Bismark Donut, and Citrus drinks including Lillian’s SLUSH!  As it is a NEW YEAR, I thought I should celebrate the 1st of January with trying something new!  So this was my very first attempt at a Lemon Meringue Pie and all in all I think it turned out great!  I am not a big crust fan and think that next time I will simply make the lemon filling into little individual custards topped with Meringue!  I do know that most people LOVE crust so feel free to make and eat all of the crust you like…with no judgement from me!  This particular filling recipe was adapted from Paula Deen’s Recipe on Food Network.

We had some good friends over to enjoy this pie with us and their little son Cooper even enjoyed a small slice.  Watching his cute little face smile at the first taste and then slowly move into an involuntary pucker was one of the CUTEST things I have ever seen! We were all laughing really really hard watching him eat it, and then he started cracking up too in between bites enjoying the attention!  It was a pretty wonderful and precious moment…all thanks to this pie!  That in itself is a reason to try it!
