My husband and I decided to start off the weekend by making brunch together, but could not decide what to make! After a careful inspection of our kitchen and all of our options, we decided to make Savory Crepes for ourselves! Now if you have never made Crepes before…please note that they are MUCH EASIER than you think! YOU CAN DO IT!
It would be an understatement to say that I do MOST of the cooking in our household! Aside from the occasional quesadilla or…lets be honest here and say a quesadilla pretty much sums it up, I am mostly on my own in prepping the food for our family! Since I have been pregnant however, my husband has stepped up in a big way and has been helping me out much more with the cooking! He has prepared us some delicious salads, grilled sandwiches, and is always helping me with the chopping and dicing and prep work. I am very grateful to him for this help and know he will get more chances to use his new skills when our little baby arrives in July!
I also want to say that these Crepes were the start to a perfectly relaxing weekend together and I think that making brunch together on Saturdays may just become a tradition! They would also be perfect for a stay at home Valentines Dinner! You could even make Sweet Crepes for dessert afterward…Banana and Nutella, strawberries and Nutella, Cinnamon Apples with IceCream…the dessert possibilities are endless!
BASIC CREPE RECIPE
- 1 Cup Flour
- 1/2 Cup Milk
- 1/2 Cup Water
- 2 Eggs
- 1/4 tsp Salt
- 2 Tbls Melted Butter
- (Optional) 1 tsp vanilla & 1/4 tsp Cinnamon if you are making Sweet Crepes
CHICKEN FETA SPINACH FILLING
- 1 1/2 Cups shredded Chicken ( I used Rotisserie Chicken yes I did)
- 1/2 Cups Spinach (frozen spinach thawed and wrung out)
- 1/2 Cup Diced Onions
- 1 Tbls Butter
- Salt and Pepper and Garlic Powder to taste
- 1/3 Cup Heavy Cream
- 1/3 Cup of prepared Feta Ranch Sauce (1/2 Cup Sour Cream, 1/4 Cup Feta Cheese Crumbles, 1 Tbls Uncle Dan’s Ranch Powder)
We are going to start with the filling as this needs to be prepared before you start cooking the crepes. Start with Sauteing onions in your melted butter.
Once your onions are soft add in your chicken and spinach. To prep the spinach, thaw it and then wring it out in a clean kitchen towel until almost dry.
Now season this up as you like with salt (not too much as the Feta will add additional salty flavor), pepper and garlic powder. And after warmed through, add in your 1/3 cup of heavy Cream.
After the cream has cooked down just a bit, add in the 1/3 Cup of Feta Ranch Sauce and stir to combine. You can now set this dish off of the heat as it is ready to add to your finished Crepes!
Now onto the Crepes! First step is to mix your wet ingredients together and make sure the eggs are incorporated. Then add in your melted butter whisking to combine. Then whisk in your dry ingredients. It will be really lumpy for a bit, but if you keep whisking it, I promise it will become smooth and lovely!
Now if you don’t have an actual Crepe Pan, use a small to medium size Non-Stick skillet and you should be fine! Make sure your pan is hot and give it a spray of cooking spray and then spoon in 1/4 -1/3 cup of batter depending on the size of your pan.
As soon as the batter hits the pan swirl it around to make a nice thin even layer of batter covering the entire bottom of your pan.
Cook your Crepe for a minute or two on the first side until you can easily lift it with your spatula and flip it over. Then finish cooking your Crepe until done!
Once the crepe has been flipped and is done cooking, spread a couple Tablespoons of the Feta Ranch Sauce on the Crepe while still in the pan.
Now put as much filling as you would like on top of the sauce and spread it out evenly! Things are getting GOOD now!
Now Use your spatula to fold over the sides of the Crepe and then slide the deliciousness onto your awaiting Plate!
Garnish with a little extra Feta Ranch Sauce and some Basil and Enjoy your fabulous Creation!
This is really a very easy meal to prepare so don’t be scared of all of the steps! You can even prepare the Crepe Batter the day before and keep it in the fridge.
