Georgia Peach Tea Cocktail

So even though fall is here, I still find myself craving the flavors of a peachy cocktail!  With our recent fall meal of Roasted Butternut Squash Soup with toasted Garlic Bread, I also served this delicious and refreshing beverage! The tea really is a good balance to the sweetness of the schnapps and the sparkler so it is not an overly sweet cocktail.  I hope you enjoy!

Also, I am going to be doing a series of Caramel Apple Treats in October! Tonight I am making some Caramel Apple Ice Cream and will let you know if it turns out or not! Meanwhile…enjoy this cocktail and have a fabulous weekend!

GEORGIA PEACH TEA COCKTAIL

serves 2

  • 3 oz Vodka
  • 3 oz Peach Schnapps
  • 4 oz Fresh Brewed Ice Tea
  • 4 oz Peach Cider or any peach sparkling beverage that you can find

Roasted Butternut Squash Soup

You all know those Days…Days where it is raining outside and all you want to do is stay inside, cuddled up in some comfy sweats watching your favorite movie with a fire crackling in the fireplace!   This is the PERFECT belly warming dish for those kinds of days!  This soup is also the perfect entree to have while welcoming Fall back into our lives!   It is healthy, warm, colorful, and uses quite the array of fall veggies!  It is also a very healthy dish as it is basically just roasted vegetables and olive oil and it is so So SO yummy!  It is also Gluten Free and can be Dairy free if you substitute Goat Cheese for the Feta as a garnish!  Hope you LOVE It!

Spinach Feta Turkey Burger Sliders or SFTBS’s ;0)

I do believe that CUTE food often tastes better than not cute food. Maybe that is why I love sliders so very much, because they are so darn Cute! I first had a version of these burgers at our friends the Garey’s for dinner. My friend Vanessa served us these amazing turkey burgers and since then I have made them many times for a quick and healthy dinner and changed up the recipe a bit here and there. It is really a basic burger recipe that you could flavor however you like…this is just one delicious option!

I chose to make this particular batch of burgers into Sliders as my husband had just bought me this slider press from Crate and Barrel and I wanted to try it out.

I do realize that I could simply form smaller burgers with my hands to create sliders, but seeing them all laid out the same size and so amazingly cute was totally worth the $12.99 or whatever he spent on the silly gadget!

So to celebrate the kickoff of football season, we cheered on our Seattle Seahawks to a win with Sliders in hand and the feta ranch sauce dripping down our chins. Both my dad and husband were making happy food noises while eating these…so I am taking that as a good sign!  Also, please let me know what you think if you try them…I would love to hear from YOU!!!

Vanilla Peach Bellini

It is PEACH season and the perfect time for this peachy cocktail!  Yesterday was my 3 year wedding anniversary with my darling husband and Peaches are one of his most favorite things!  To celebrate the event, I blended up a batch of Vanilla Peach Bellini’s before we went out for a romantic dinner!  It was sort of our own little peachy cocktail hour after work!  Now this is not the original recipe for a Peach Bellini, but my own little recipe and interpretation of the drink.
Next week I will be making these again, but with some Fresh peaches from my Mom’s tree which I am sure will make them even more delicioso!  If you like fruity blended cocktails, you gotta give this one a try!  It would be really pretty and yummy to finish it off with a float of raspberry liquor, or a few fresh raspberries, but  I did not have any yesterday so just garnished with a few grapes which worked well too!  I hope you like this as much as we did!  Here’s to love, gorgeous late summer nights, and PEACHES!!!
